Black Bean and Corn Salad
This is the most amazing salad ever. I am so in love with it and have been eating it a lot lately.


1 can black beans, drained and rinsed
1 can mexicorn, drained (the corn with red and green peppers in it)
2 medium avacados, chopped
4 Roma tomatoes, chopped
1 small red onion, chopped ( I used 1/2 of a small)
1 jalapeno pepper, seeded and finely diced
2 T. chopped fresh cilantro
1/4 t. cumin
1/4 c. red wine vinegar
1/4 c. olive oil
1 package (0.7 ounces) Italian dressing mix

In nonmetallic bowl combine first seven ingredients. In measuring cup, combine oil, vinegar, cumin and dressing mix. Pour over bean and corn mixture. Stir. Refrigerate at least 2 hours to allow flavors to blend. Serve with corn scoops or totilla chips. OR just eat with a fork like I have been doing lately.





Granola Bars

Today, we decided to make one of the many things off my Pinterest boards. So we I picked Granola Bars and gave them a whirl. I love Granola bars, my kids not so much. The girls ate them because it was the only thing I offered for snack. Little man ate one in a heartbeat and asked for another one while his mouth was still full.

Here is the recipe, I adapted it from The Marathon Mom, they were Delish!

1/4 cup coconut oil - I used butter
1/4 cup honey
1/4 cup brown sugar
2 cups oats - I used old fashioned, regular oats (not quick cook)
1 cup brown crispy rice cereal - I used good old fashioned rice krispies
1 teas vanilla
1/4 cup chocolate chips - I used 2 TBSP choc chips & 2 TBSP butterscotch chips
*2 TBSP ground flax seed - my addition*


Instructions:
1. Stir oats & rice cereal in large bowl
2. Melt oil/honey/sugar until bubbly, but not more than 2 minutes, Stir constantly.
3. Let oil/honey/sugar mixture cool for 2-3 minutes and then add vanilla, stir
4. Pour liquid mixture over oat/cereal mixture. It's important to mix well so that the oats & cereal are well coated and stick together.
5. Grease 8x9 pan and pour mixture into it.
6. Press down FIRMLY, this step is important. Packing it down helps the granola stay together.
7. Add the chocolate chips to the top of mixture while still warm and press firmly so they get "stuck" in the mixture.
8. Put bars in the freezer for a few minutes to cool & set up
9. Once set up cut into bars & store at room temperature
